You can use Old Walls wine in your favourite recipes. If you need a little help why not try one of our own favourites from the ones below.

Creamy potato and scallops with Old Walls wine picture

Scallops in creamed potato shell
(Serves up to 4 people)

8 Scallops (Washed removed from shells & sliced, keep 4 shells)1 ½ lbs Potatoes (Cooked ready to cream)
4 tablespoons of Old Walls Devon Regional White Wine
2oz Mushrooms (sliced)1oz Butter
1oz Margarine
3 rounded teaspoons of Plain Flour
1 Egg (beaten)
½ a pint of Milk
Parsley (For garnish)
Salt & Pepper

METHOD

  1. Cream potatoes with butter milk and season well.
  2. Mix milk and Old Walls White Wine in a saucepan (this may look curdled but will be fine once thickened) Add scallops and simmer without boiling for 8-10 minutes until tender.
  3. In a separate saucepan melt margarine and lightly cook mushrooms, then add flour and cook for a further 2 minutes.
  4. Strain scallop liquid into mushrooms slowly blending mixtures, season well and cook for a further 3 minutes.
  5. Stir in scallops to sauce, put grill on to a moderate heat.
  6. Put creamed potato into a piping bag (fitted with a large nozzle) and pipe potato around the four scallop shells, brush with beaten egg and brown under grill.
  7. Divide scallops and sauce between the four shells and garnish with parsley

This dish should be served piping hot with crusty French bread and Old Walls Devon Regional White Wine.
