Beef Strogonoff recipe using Old Walls wine

Beef Stroganoff
(Serves up to 4 people)

1lb Rump Steak cut into1 inch strips (other cuts maybe used)
8oz Long Grain Rice
2 small Onions (Peeled & sliced)
1 Green Pepper* (Deseeded & sliced) * Optional
4oz Mushrooms (Washed & sliced)
2oz Butter
¼ of a pint of Beef Stock
1 carton of Soured Cream (5 fluid ounces)
1 level teaspoon of Salt
1 rounded teaspoon of Plain Flour
1 rounded teaspoon of Tomato Purée
Fresh Parsley (Chopped)
Seasoning
A bottle or two of Old Walls Wine!

Method

  1. Place beef on a plate and season well.
  2. Melt butter in large saucepan gently fry onions and mushrooms for approximately 4 minutes then add beef frying for a further 5 minutes, lastly stir in remaining flour and gently cook for another 2 minutes.
  3. Stir tomato purée into stock then pour over beef mixture, bring all ingredient to the boil then cover and simmer for 15 minutes.
  4. Meanwhile cook rice as directed (usually 12 – 14 mins)
  5. Strain and rinse rice then arrange on a warmed serving dish.
  6. Stir soured cream into beef, pour over rice and sprinkle on chopped parsley

This dish can be served with a green salad and crusty bread and either Old Walls Palace Red or Old Walls White Wine.
